In large saute pan (I use my Wok) add a few tablespoons of bacon fat and turn heat on high and grease pan. You want it screaming hot. Then toss in 1/3 of the pulled pork and let it crisp up and stir a few times and then remove and add to separate mixing bowl to cool and repeat the process two more times
  9. Portion out pork into portion containers then scoop out sauce from slow cooker over top of pork
  10. Enjoy!

After slow cooking, the meat can be shredded and seared in a hot skillet to get crispy bits, great for enchiladas and tacos toppings. The slow cooker is the best tool for the job because as the pork marinates and heats the meat, it begins to tenderize directly in its juices making a moist and delicious dish. Serve up carnitas with a side or sour cream, guacamole and cilantro for a tasty lunch bowl meal. You can make this in an Instapot but I always use my trusty crock pot because I like the meat to cook low and slow for this dish. Slow cooked meat is always so tender.
